Culinary heritage of Rivne region: MATSYK

Get to know Rivne region not only by historical monuments, but also through authentic recipes and unique regional products
The city of Rivne, as a regional centre, has for decades gathered the cultural traditions of all districts of Rivne region. It also applies to the culinary heritage. The territorial location of Rivne almost on the border of Polissya and Volyn has led to a combination of culinary traditions of these historical regions within the city. However, over time, old traditional dishes appear less and less in the kitchens of Rivne housewives and in the menus of local restaurants. Moreover, young people hardly know at least a few names of authentic delicacies.
Therefore, to preserve and promote the traditional culinary heritage of Rivne an international project "Cultural heritage of the cuisine - the promotion of culinary traditions through the professionalization of the gastronomic offer of Lublin and Rivne" was launched in 2020 which is implemented by the Department of Strategic Development and Investment of the Rivne City Council and community organization “Agentsiya stalogo rozvytku mista” (Agency for sustainable development of the city) together with the Government of the City of Lublin. The project is funded by the European Union under the cross-border cooperation program "Poland-Belarus-Ukraine 2014-2020".
Each of the three parties to the project has its own commitments and stages of the project.
The implementation of the project in the part of the NGO "Agency for Sustainable Development of the City" began with the study of regional dishes of Rivne region and the establishment of communication with local restaurants. The team of the NGO "Agency for Sustainable Development of the City" went on research expeditions to Polissya. We consciously searched for distant villages, talked to culinary experts in different places, studied the traditions of cooking in families and recipes for regional traditional dishes. The hostess prepared the most popular local dishes - green borsch with mushrooms and sluggish fish, black pottage and potravka, sourdough pancakes baked in the furnace, dried carp on straw in the furnace, kulish with mushrooms and ribs, kartoplyanyky (potatoes), rozsol for potatoes in the peel, pinecone jam and wild honey, cranberry juice and doughnuts sprinkled with poppy seeds, etc. - and shared their own culinary secrets, which are passed down in their families from generation to generation.
As a result of expeditions and research of the culinary Rivne region, a culinary catalogue “Enjoy the cuisine of Rivne: AUTHENTIC DISHES AND DRINKS” was created. This catalogue is published in three languages (Ukrainian, Polish, English) and is available online and printed. The NGO Agency for Sustainable Development also created a catalogue in Braille. "Matsyk - a dish that unites generations"
To promote the authentic regional dish of matsyk, the NGO "Agency for Sustainable Development of the city" created a promo video Matsyk, which showed the process of cooking matsyk, the connection of generations and the beauty of the Rivne region. Subtitles for the video are available in three languages: Ukrainian, Polish and English.
On May 15, 2021 in Rivne will be held the FESTIVAL OF AUTHENTIC CUISINE "MATSYK", which will present regional dishes of Rivne and Lubelskie (Poland).
