Enjoy the Cuisine of Rivne: Authentic dishes and drinks

Exactly a month ago, the NGO "Agency for Sustainable Development of the city" presented an electronic version of the culinary catalogue of traditional dishes of our region - "Taste Rivne: authentic dishes and drinks", which was developed within the international project "Cultural heritage of the cuisine - the promotion of culinary traditions through the professionalization of the gastronomic offer of Lublin and Rivne", which is funded by the European Union under the cross-border cooperation program "Poland-Belarus-Ukraine 2014-2020".

 


Our traditions - whether culinary, craft, beliefs or rituals - are all parts of our history, the heritage of our ancestors and generations. It is extremely rich and inexhaustible. In order for this intangible heritage not to disappear over time, it is very important to find it, preserve it, retell it, reproduce it and tell the world more about it. For this purpose, we created this culinary catalogue of authentic recipes of our region.

The catalogue describes the main dishes, desserts and drinks, interesting facts and recipes from different parts of the Rivne region in three languages: Ukrainian, English and Polish. In cooperation with Rivne restaurants, we managed to reconstruct ancient recipes with elements of modern dishes. Thanks to this catalogue, you can now prepare green borsch with carp and mushrooms, kulish with crayfish, polba (emmer) - prince's porridge, potravka, as well as surprise your guests with horilka of Ostroh princes. This catalogue, where you can find interesting old recipes of local cuisine for every taste, has been created for restaurateurs who want to bring authentic local dishes to their menu, and for those who prefer gastronomic experiments in home cooking.

The team of the NGO "Agency for Sustainable Development of the City" found ancient regional recipes, went on gastronomic trips in search of the history of origin and existence of authentic regional dishes and explored our Rivne region to taste.

In different parts of the Rivne region, we managed to find original recipes that have a unique structure and are shrouded in legends passed down by housewives from generation to generation. We visited a real "winter" matsyk under the roof in the village of Svarytsevychi, Dubrovytsia district, dried carp were taken out of the furnace in Rokytnivshchyna, pancakes were kneaded together with the hostess in Zarichnetskyi district, where we also were treated with kulish.

All dishes from the past are extremely simple in the composition of products and their main source is the forest, ponds and garden. Expensive spices, the lack of variety of products prompted women to seek their own recipes to improve the taste, adding to dishes berries, mushrooms, herbs, honey. Life in the countryside has always been difficult, with work and the daily challenge of feeding a large family. Looking at how fast culinary preferences and fashion trends are changing today, and how easy it is to find a recipe on the Internet, it is difficult to even imagine how they learned to cook, where they got their knowledge and how they passed their secrets to each other.
